Summer smoothie

of watermelon, strawberries, mint & basil

Roughly chop the watermelon, remove the green leaves and stalky bit from the strawberries and add to a blender jug. You can remove the seeds from the watermelon if wanted but in my eyes that is extra goodness so I leave them in.

Now add the remaining ingredients; ice, mint, basil and apple juice.

Blend until nice and smooth, ensuring the seeds have broken up sufficiently.

Divide by pouring into two glasses and enjoy while cold.

This is a recipes base is taken from a friend of a friend who is a chef on a luxury yacht; he makes a similar version to this as a small vitamin to go with breakfast for the guests.

If it’s good enough for them, It’s good enough for us!

Just because the watermelon is so refreshing and goes so well with the herbs, I would be inclined to reduce the strawberries, allowing the other flavours not to be masked as much. Saying that, if you really like strawberries…put in more.
